Kajiwara-san is a kind 3rd generation, 66 year old master craftsman who specializes in forging wa handled Aogami 2 steel kitchen knives. Like Murata-san he works in a small smithy shop on the island of Tosa Japan. The knives is this collection have Kajiwara-sans subtle sexy, suminagashi tone on tone damask pattern. It was a challenge to photograph these cool blades and capture on screen their great look. Very handsome is the unique wavy pattern. Aogami 2 or blue paper 2 steel is a terrific traditional Japanese steel that is very high carbon, takes a great edge and holds it longer than most other steels. It is however a patina monster. So those of you that like that bronze look patina will be happy with Kajiwara's Suminagashi knives. They patina very quickly and must be cared for with a regular wipe of mineral oil or tea seed oil and wiped dry immediately after use. The reward of ownership is that kajiwara really heat treats well and has a great grind + edge on any of the knives in this collection. The spine is a little thicker than some of the super lasers but kajiwara's cutting performance is really excellent. These are great workhorse knives that can power through most any prep task with ease. Kajiwara-san knives come fitted with one of the most comfortable rosewood wa handles I have ever used. It is a smooth oval of just the right diameter and weight with a premium black pakka or buffalo horn bolster suitable for left and right and cooks. If you want a (great value) serious Aogami 2 workhorse kitchen knife hand forged by a 3rd generation blacksmith with HRC 63 you just found your new edge in the kitchen. CW

Medium size Suminagashi chef knife with good balance and super comfortable oval rosewood handle. Just the ticket if you like a little more rock than the santoku with a bit more heft than the lasers and do not have a huge cutting board or prep space.

This is a popular knife size for both line cooks and home cooks. Big results with a substantial but still nimble chef knife. The oval handle is extremely comfortable and suited equally to either left or right hand use as are all knives in Kajiwara- san's suminagashi collection. Once you get used to a 8.5 inch knife you may not want to go smaller for most prep. A 210mm saves you time in most kitchen chores and it looks damn impressive too.
