These lustrous cooks knives are breathtakingly sharp. Made in the traditional Japanese 3 layer method the Ninja knives feature a center layer of high carbon (AUS 8) steel between 2 layers of (SUS 405) stainless steel creating a strong thin rust resistant blade. They are honed at a slightly more narrow angle and this combined with their thin carbon edged profile equals high performance.

The combination of these 2 steels creates a long lasting edge sharpness yet the knives are quickly and easily resharpened. The Rockwell hardness rating is an impressive 60. The Ninja chef blades are nicely balanced, comfortable and precise. The black wood/resin handle is triple riveted on a full tang for strength and durability. It is a western grip suitable for both right and left hand use. My kanji has been artistically applied to each blade for authenticity and to compliment the attractive graceful bevel line of these excellent knives. The laser like performance of these Ninja blades have made them a value favorite of foodies and chefs who appreciate sharpness and ease of care at a very attractive ownership price.
