72 year old Lizuka - san and his two sons Masayuki and Yoshihide truly hand make blades that have become legendary in their humble shop in Sanjo. The wait to acquire one can be upwards of a year. Shigefusa kitchen knives IMO are unlike any other. Every single step is by hand demanding ancient techniques. The secret steel recipe is a Swedish High Carbon base perhaps somewhat similar to a fine Tamahagne. Hardness is about HRC 63.

The most fascinating step in the making of a Shigefusa is that the blade is scraped by a special hand scraper, stroke by demanding stroke until at last a silky smooth blade finish is achieved. It is painstaking work but results in a stunningly smooth kurouchi finish in the end. Hand sharpened on assorted natural stones like even the famed Belgian Corticule Lizuka's secret steel takes and holds a wicked edge. Shigefusa knives are incredibly strong . These are substantial cutting tools not lasers. The blade spine at handle can be almost 6mm thick but thins rapidly down to a terrific thin razor edge. You will see here some blades with Kanji engraved from any of the 3 family members. Rest assured all are very fine workmanship.

Shigs usually come with a decent Ho handle but for me these masterpieces are even more compelling mated to a similar sized custom rare burl octagon handle.

I have crafted several rare bog oak (5400 year old) to salvaged curly Koa creating a very beautiful and rare handle. Bog oak is a status symbol and is actually more costly per sq foot than a modern construction condominium. Does it bring good fortune as some say - time will tell. I do know it makes these legendary knives must have in any serious collection or kit. The handles are a more generous size than most so are a best fit for average to large hands . Shigefusa Custom Santoku Reviews

I spoke at length with Chris before settling on my Custom Bog Oak and curly Koa Shigefusa. His knowledge and insights of the art of the blade along with guidance in selecting the right blade was impressive. The comfortable handles he creates (then matches with a specific blade) are works of art in their own right. For me, a high performance tool is a joy to use. When a handle of this quality is attached to the right blade it becomes high performance art. Of course aesthetics are not what this knife was made for. Does it perform?

In a word, Yes. I began dinner prep with shredding a few brussel sprouts. The knife glided through the brussels with precision. I began to slice thinner and thinner sections. Soon I had made confetti of the entire bag. Having forgotten dinner prep I then razored a red pepper into fine spears and sliced and diced a head of celery. Moving through my vegetables drawer, I made a stack of translucent carrot slivers. To complete the Shig's test run, I French-cut some green beans. I then turned my attention to making dinner for my wife, who was bemused at the smile on my face. As an amateur home cook I am having fun with this phenomenal knife. I can only imagine how much better it would perform in the hands of a professional chef.

In my opinion, anyone interested in getting the best taste, value, and presentation from the food they prepare needs to have the right tools. One of Chris' quality knives can change how you treat your food and by extension, how you treat yourself through what you eat.
