In my youth I was privileged to race one of the world's finest road bicycles handcrafted by a master frame builder who understood weight, material and perfect geometry. My bike was super light,fast,nimble and required less effort to race than any other. No fancy paint job rather a sandblasted matt grey steel finish camouflaged it's true high performance excellence. Master smith Yoshito hand forges matt (nashiji or yuki) style stainless clad, 2 sided knives that like my bike have near perfect weight, geometry, grind and effortless performance. Only a handful of the most skilled craftsmen can master the difficult but pure shirogami #1 core steel HRC 61 which takes and holds the keenest of edges with ease of resharpening. Clad in protective stainless Yusu knives are everything a cook would want in a hand made, hammer forged Japanese kitchen knife. The name YUSU means excellence. Every knife in this collection has been crafted to meet my specs for a smoothed spine and final natural stone sharpening not found on Fujiwara and other fine shirogami #1 knives. Each knife is fitted with an expensive,comfortable D shaped (right hand) chestnut handle with a black buffalo horn bolster not a cheap ho (poplar) wa handle with a plastic bolster commonly used. The chestnut handle also provides better grip when wet. Yusu knives have a extra blade height like Takeda which IMO really enhances both speed ,food release and cutting performance that experienced Chefs love. There is a 6 month wait for a Yusu knife when not in stock. I encourage you to invest in one of these remarkable knives or even a set. Like my bike, that on quick glance would be overlooked as a winner so it with Yoshito's Yusu. Quietly handsome these these stealth blades will speed through all your kitchen tasks whether at home or on the line. I believe there may be no finer performing knives anywhere near this price or often for much more.

It has great weight and is a really nice blade.It is a finesse blade that keeps its edge and with white # 1 core steel it is easy to maintain.Great value at under $199.
