Each knife in the zen chef collection is crafted much as they have been for almost 500 years over pine wood coals in small extremely hot forge by a gifted blacksmith in the famed Tosa region of Japan. These striking black beauties feature a traditional Japanese carbon blue steel core fused to a softer outer sand iron steel. Hand honed by the craftsman this historic steel takes and holds a razor edge that few blades can achieve.

After almost 5 centuries, the hardness of the blue steel in these knives in the Rockwell rating range of 63+ is barely matched by the finest modern powder steel technology. These amazing knives are well represented in Japanese kitchens and will be a welcome addition to yours I believe. For ease of western use they feature a double bevel edge sharpened to a tight angle.

These affordable high carbon chef knives are very well balanced, light and precise. The handcrafted beautiful, oval Macassar ebony wood handle is the most comfortable for both left hand use and right that I have ever experienced.
